Easy Cajun Potato Salad

Really nice salad, perfect for BBQ's and picnics.

Serves 4:

  • 500g new waxy salad potatoes
  • Salt an black pepper, to taste
  • 1 small sweet pepper
  • 2 sticks celery
  • 1 small red onion
Dressing:
  • 150ml or less mayonnaise
  • 2 tsp Dijon or wholegrain mustard
  • Few dashes of Tabasco sauce
  1. Boil the potatoes as usual in salty water for about 15-20 minutes until they are tender.
  2. Rinse, dry, halve and deseed sweet pepper. Slice into strips and put them into salad bowl.
  3. Rinse, dry and finely slice the celery, add to the pepper.
  4. Peel the onion and slice it into crescents. Add it to the bowl.
  5. To make a dressing, mix the mayonnaise and mustard in a small bowl and add Tabasco to taste.
  6. Drain the potatoes, cool under running water, drain again and ad the the salad. Add the dressing and mix well.
VARIATION: Add chopped hard boiled eggs.
