Healthy chickpea burgers

Heathy burgers with chickpeas and red kidney beans. Can be used in a lunch boxes or as a snack. Chickpeas are good source of iron, good fats and nutritionally help out the tummy and heart. Sunflower seeds - power packed with lots of minerals and B vitamins.

12 medium size burgers:
  • Can [410g] chickpeas, drained and rinsed
  • Can [410g] red kidney beans, drained and rinsed
  • 1 carrot, trimmed, peeled and finely grated
  • 1 small onion, peeled and finely grated

  • 50g sunflower seeds
  • 1 egg
  • 1 garlic clove, peeled and chopped
  • 1 handful fresh coriander, chopped
  • Pinch of salt and ground black pepper
  1. Preheat the oven to 220C | Gas7. Line a large baking tray wit greaseproof paper.
  2. Place all the ingredients in a food processor and blend for 5-10 seconds, until the mixture is fairly coarse. Scrape the sides of the bowl and blend for a further 10 seconds.
  3. Remove the blades from the processor, wet hands with cold water and shape the mixture into balls.
  4. Place them on the prepared baking tray and flatten slightly with the back of the spoon.
  5. Bake for about 20 minutes until lightly coloured. Remove from he oven and allow to rest for a few minutes.
  6. Serve with raw salad and sweet potato wedges.
